Chocolate doesn’t start in a factory. Like other luxury foods, it starts with a fruit. In this section, you will find out more about how cacao is transformed into chocolate, step by step. From the very first seed, growing into a tree, leading to the moment a pod is harvested. All the way to the finished chocolate bar you purchase.

I aim to highlight the different stages of chocolate making, such as fermentation, drying, roasting, and refining. I will share arching articles, but also post specific focus pieces on what happens during each step, and why it matters. This is about building an understanding, and to build an appreciation on how many choices, variables, and people are involved in creating chocolate. Highlighting the chain, if you will.
